Makes one 8×8 or 9×6 pan
red bell pepper
shredded sharp cheddar cheese
condensed cream of mushroom soup
ok, probably about 2 Tbsp
Cook chicken with your favorite spices and cut to bite sized pieces.
Clean and cut broccoli and bell pepper into bite sized pieces.
Layer veggies evenly into your dish and spread chicken evenly on top of that.
Spread cheddar cheese over this. The heat of the chicken will start it melting.
Dump cream of mushroom soup into a pot. Fill emptied can 3/4 of the way with milk and add to soup. Add lemon pepper and bring to a boil, stirring frequently.
Pour soup over the cheese and carefully spread to the edges of the pan.
Melt butter in a large microwave safe dish.
Crush up ritz crackers and mix into the melted butter along with the parmesan.
Spread topping evenly over the soup.
Cover with foil and bake at 375 for 30 minutes. Remove the foil and bake an additional 10-15 minutes or until top is golden brown.
